1. Low-Carbohydrate Tacos
Craving the flavor of real Mexican tacos but trying to steer clear of the carbohydrates in tortillas? It’s easy with this innovative take on the authentic beef taco recipe. Simply skip the tortillas and enjoy all the nutritional benefits (and taste) of tacos at home.
Ingredients:
· 1 pound of Florida Raised grass-fed beef
· 1 yellow onion (diced)
· 4 ounces of pickled jalapeno peppers
· 2 cups of shredded iceberg lettuce
· 1 fresh tomato (diced)
· 1 avocado (remove skin, pit and slice)
· ¼ cup of your favorite salsa
· 1 package of taco seasoning dry mix
· Sour cream (for topping)
Preparation:
Cook the ground beef to directions on our package and drain excess oil after the meat has been cooked thoroughly. Then simply combine all the ingredients in one bowl, toss with salsa and serve! Food bowls like this offer an easy ‘low mess’ meal idea that is nutritional and satisfying.
For food safety, do not retain ‘left over’ salads that have been combined with ground beef.
2. Beef Korean Bowl with Quinoa
This easy to make meal is perfect for busy week day evenings, when making a big mess in the kitchen isn’t an option. If you love the taste of Korean food, but want to cook a healthy version at home, this short-cut recipe is a real time saver, delicious and packed with an impressive amount of fiber, protein and you may already have most of the ingredients in your kitchen, to put it all together.
Ingredients:
· 1 tablespoon of vegetable oil
· ½ tablespoon of fresh ground ginger
· 3 peeled and minced cloves of fresh garlic
· 1/3 cup of brown sugar
· 2 cups of salted chicken stock (broth)
· ¼ cup of your favorite soy sauce
· 1 tablespoon of sesame oil
· 2 green-onion tops thinly sliced vertically
· 1 cup of dry and rinsed quinoa
· Dried red pepper flakes (to taste, if you like it spicy!)
· Salt and pepper to preference
· 1 pound of Florida Raised ground beef
Preparation:
a) Take the dried and rinsed quinoa and place it in a small sauce pan. Add 2 cups of salted chicken stock. Allow the quinoa to come to a full boil, and then reduce the heat to simmer for 15 minutes, stirring occasionally to prevent sticking.
b) Place the sesame oil in a large frying pan. Add the garlic cloves and fresh ginger to brown on medium heat. Then add the ground beef and cook to instructions on the package. Drain the fat from the pan.
c) Combine the brown sugar, soy sauce and sesame oil, salt and pepper (and red pepper flakes if you desire for a spicy flavor) in a small bowl. Whisk the ingredients together to make your sauce.
d) Add the completed sauce into the mixture with the ground beef and turn your stove to medium or low heat (depending on temperature settings) and allow the sauce and mixture to simmer gently and infuse the beef.
e) Before serving, toss the ingredients in a bowl. Serve over the prepared quinoa and garnish with slices of fresh green onion.
2. Beef Stroganoff
Very few meals offer as much ‘stick to your rib’ satisfaction as a great piping hot beef stroganoff on a rainy day. Don’t settle for an ‘out of the box’ noodle mixture, when you can create this fast, easy and delicious recipe at home, using this authentic scratch recipe.
While some beef stroganoff recipes call for strips of cubed round steak, we found that using quality grass-fed ground beef to be a better combination with delicate egg noodles.
Ingredients:
· 1 pound of Florida Raised grass-fed ground beef
· 6 tablespoons of all purpose flour
· 2 tablespoons of butter
· 1 medium fresh yellow onion sliced
· 1 tablespoon of extra virgin olive oil
· An 8-ounce package of sliced fresh mushrooms
· 1 regular can of beef stock or broth (salted)
· 1 can of cream of mushroom soup (any brand)
· 1 cup of sour cream
· 1 package of egg noodles (dry)
Preparation:
a) Place the ground beef into a frying pan on medium heat. Add all six tablespoons of flour. The flour helps create a natural gravy and sauce base, that enhances the flavor and texture. Cook to instructions provided on the package of Florida Raised ground beef.
b) Remove the meat and flour gravy mixture from the heat and let rest.
c) Take a second frying pan and add the onion slices, mushrooms and olive oil to the pan. Cook mushrooms and onions until they are sautéed thoroughly (but not crispy).
d) Combine the onion and mushroom, with the beef. Add the can of mushroom soup mix and beef broth and cook over a low temperature to simmer for about thirty (30) minutes. Salt and pepper to taste.
e) Toss the cooked egg noodles in with the other ingredients and stir in the sour cream to create a rich creamy flavor.
